Hiring our first employees?

So I just started a service business a few weeks ago and we’re growing a bit faster than anticipated. Anyway, recently I sent out around 10 job applications for people interested in helping out. Most of them are under 18 so I know they need working papers. Basically, what kind of documents do I need to send them so they can legally work and what do I need from them? In New Jersey
